It’s getting to be camping season in Texas!

I’m excited to get out of the house with the family and do some camping! (I should probably clarify what I mean when I use the term “camping…” We have a nice little travel trailer with beds for everyone; the traileralso has a minikitchen, seating area, outdoor kitchen/prep area and most importantly, it has AIR CONDITIONING! We are definitely not roughing it.)

With spring just around the corner and the weather warming up, I already have our next few camping trips penciled onto the calendar.

One of the best things about living in Texas is all the fabulous barbecue available. You can count on us having some type of barbecue dish on the menu at least once a week.

When it comes to Texas side dishes, beans are always on the menu. Baked beans are definitely a crowd-pleaser, and theygo with just about every meal. The Skillet Barbecue and Bacon Baked Beans recipe I’m sharing today really is just about thebest bakedbeans with bacon recipe I’ve had.

When we go camping, we cook most of our meals outside on the grill and gas stove. When planning the menu, since weather can be unpredictable at times, I include meals that can be cooked outside or inside on the stove/microwave. (Things like hamburgers, hot dogs, barbecue, fajitas, pasta dishes and various side dishes.)

This Skillet Barbecue Baked Beans with Bacon recipe is a great campfire beans recipe. It uses only one pan and even better- the beans can be cooked on a regular stove top/oven when needed or over the campfire or gas grill!

The best Skillet Barbecue Baked Beans with Bacon Recipe EVER! – Bonus: you can make these beans in the oven or over the campfire. (campfire beans recipe)

Ingredients

Scale

  • 5 slices Wright Hickory Smoked Bacon
  • 2/3 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 15 oz can pinto beans, drained and rinsed
  • 1 15 oz can light red kidney beans,drained and rinsed
  • 1 15 oz can navy beans,drained and rinsed
  • 2 cups high-quality barbecue sauce (I use Stubb’s BBQ sauce)

Instructions

Stove/oven:

  1. Preheat oven to 350.
  2. In a 12 inch oven safe skillet or dutch oven, cook bacon til crisp.
  3. Remove bacon, keeping drippings in skillet. Add onion and pepper to skillet and cook until browned. (about 4 minutes.)
  4. Add beans and barbecue sauce to skillet and stir til ingredients are combined.
  5. Break bacon in half and add to skillet. Gently stir bacon into the mix until covered with sauce and beans.
  6. Bake in oven 20 to 25 minutes.,

Campfire instructions:

  1. In a 12 inch cast iron skillet with a lid or dutch oven, cook bacon til crisp.
  2. Remove bacon, keeping drippings in skillet. Add onion and pepper to skillet and cook until browned. (about 4 minutes.)
  3. Add beans and barbecue sauce to skillet and stir til ingredients are combined.
  4. Break bacon in half and add to skillet. Gently stir bacon into mix until covered with sauce and beans.
  5. Bring beans to a low boil, then cover with lid and move to low heat area of the campfire. Simmer about 45 minutes, checking beans occasionally and add a bit of water if beans are looking too dry.
